Food Friday: Capsule Menu For One

The Mister and I make it a practice to have a home-cooked dinner together most nights. It’s healthy and it gives us time to catch up on each others’ day.  Unfortunately he travels a lot for work (in fact, looking at our shared calendar recently, I discovered that in February and March, we saw each other about 3 days out of 30).  And when he’s gone I’m much less inclined to waste time in the kitchen for “just me”.   Consequently I tend to skip dinners or fill up on spoonfuls of almond butter.

The biggest stumbling block is that by the end of the day, I don’t want to think about what to make or need to stop at the grocery store on the way home.  Knowing this predilection, I’ve decided to shop in advance for a few easy, tasty dinners that I can easily put together. By knowing in advance what I will be eating, and having all the ingredients on hand, I’m hoping to avoid my usual routine of staring mournfully into an empty fridge each evening before ordering pizza.

Meal requirements

  • Under 20 minutes to prepare, start to finish
  • Fresh, whole foods
  • Contains protein and vegetable
  • Ingredients can be purchased on Sunday and last through the week

With the above in mind I came up with the following 4 meals to rotate, several of which are from my favorite cookbook, The Bonne Femme Cookbook:

  • Salmon with wine, leeks and garlic; seasonal vegetable
  • Chicken Tarragon ; seasonal vegetable
  • Spanish rice and black beans; calabacitas

(Note that the side vegetable tends to fill half the plate – I need the bulk to feel full and don’t want to fill up on empty calories) 

The idea is to make up enough each night for dinner that evening and have leftovers for another dinner that same week. That makes six meals, plus I will likely go out to dinner at least once.
